The bilona method

Five steps. Two days. One jar.

This is the whole process, exactly as it happens in our kitchen. Slower and costlier than cream separation — which is precisely the point.

  1. १

    Gir cow's milk

Fresh A2 milk from desi Gir cows, collected the same morning.

  2. २

    Set into curd

The whole milk is cultured overnight in an earthen pot. Not cream. All of it.

  3. ३

    Hand-churned

A wooden bilona, turned by hand at dawn, until butter rises to the top.

  4. ४

    Pure white butter

The butter is lifted off, washed clean, and nothing else is added to it.

  5. ५

    Slow heating

Simmered on a low flame until it turns grainy, golden and fragrant.

Our story

Our Story

Pavitram A2 Gir Ghee was started at home, on the shubh occasion of Akshaya Tritiya, with a single clay pot, a wooden churner and a promise never to take a shortcut. Every jar is made from the milk of indigenous Gir cows, set into curd overnight and hand-churned by the traditional bilona method.

The Gir is a gentle, hardy breed, grazed and grass-fed and never pushed for yield. Her milk carries the A2 beta-casein protein naturally. We take that milk whole, culture it, churn it by hand and slow-heat it on a low flame until it turns grainy and gold. It takes roughly twenty-five litres of milk and two full days to fill one litre of ghee.

We would rather sell fewer jars than sell a faster one.
